Fall crop donations are pouring in at the Campus Kitchen. We received 42 pounds of butternut squash from Paradox Farm last week with more coming in today. A local pantry is giving us 50 pounds of turnips- they have more than they can hand out. Our garden is still producing as well, mustard greens are the most bountiful crop at this point.
Given that Lexington was all of 20 degrees this morning, it’s time to put these hearty vegetables to use in soups and stews.
Turnips and Butternut Squash will be paired with beef to make a thick stew. Mustard Greens will compliment a tomato based chicken noodle soup.
